Must-Try Smoked Salmon and Feta Sandwich

Smoked salmon, feta, and crunchy root vegetables atop a loaded salmon toast! This elegant and filling smoked salmon sandwich, also known as lox, is ideal for a fast brunch or snack. And if you enjoy lox and bagels, you’ll adore this inventive version with a strong Mediterranean influence!

One of my favorite uses for smoked salmon is this toast with feta and smoked salmon, topped with a simple root vegetable salad. In essence, it’s the type of portable lunch I long for all the time! Additionally, it makes a simple and delectable snack, much like a radish with butter!

Imagine this open-faced smoked salmon sandwich as a stronger, perhaps lighter Mediterranean take on the traditional lox and bagels. (Leaving out the bagel alone allows you to save about 200 calories!) You’ll adore the zesty tastes, which start with a generous spread of superb feta cheese and conclude with crisp root vegetables that have been tossed with lime juice, olive oil, and a pinch of Aleppo-style pepper.

When I don’t feel like cooking, I enjoy that it can be thrown together quickly yet is also elegant enough to offer at brunch.

Most grocery shops have smoked salmon in the refrigerator next to the fish counter, which is a handy item that is already cooked. There are alternatives to suit almost any budget, but even if it means spending a little more money, it’s crucial to get high-quality smoked salmon. Check the label carefully before purchasing to ensure it doesn’t include excessive salt or sugar. Avoid salmon that has dark brown borders or patches, appears too greasy, slimy, or is too dry. (Dark patches indicate that your lox or salmon has gone rotten.)
To use with smoked salmon is cheese
The traditional and obvious pairing for lox is cream cheese, but other soft cheeses like goat cheese, labneh, brie, or feta (my fave!) might also be used. I break up my feta with the back of a spoon and combine it with some fine extra virgin olive oil to make it more spreadable. (However, I substitute leftover whipped feta for it on this salmon sandwich if I ever have some on hand.)
Notes and ingredients for toast with smoked salmon
Only a few basic ingredients are needed to make my smoked salmon toast. What you’ll need is as follows:
Toast – Four pieces of whole wheat bread can be used as a lighter substitute for bagels (it saves about 200 calories).
Try bringing chunks of creamy feta cheese. Smash it with some olive oil to make it spreadable. Labneh, whipped feta, or your preferred cream cheese can also be substituted.
You will need 5 to 6 ounces of high-quality smoked salmon or lox. It is located in your grocery store’s refrigerated department, close to the fish counter.
Beets, carrots, radishes, green onions, and other vegetables, are cut into thin, short sticks. To prevent the beets from staining your fingers, don’t forget to use gloves!
extra virgin olive oil with lime juice. To season the root vegetable salad, add a squeeze of lime juice, a drizzle of extra virgin olive oil, a pinch of kosher salt, and a few grinds of mild Aleppo pepper.

Creating it
Simply sprinkle the feta cheese over each slice of bread to create these salmon toasts. Slices of salmon should be placed on top of each toast before the raw root vegetables (I like to toss them in a bit of lime juice and olive oil first before topping the toast). Kosher salt and a dab of red pepper flakes or Aleppo-style pepper are used to season.
