Arugula and Avocado Potato Salad

Ingredients :

  • 2 cooked and cold potatoes (from the day before for me)
  • 1 good handful of arugula
  • 1 medium avocado
  • 6 cherry tomatoes
  • A little corn
  • Black and green olives
  • Mozzarella
  • Vinaigrette or your choice:
  • 3 tbsp olive oil
  • 3 tbsp rapeseed oil
  • 1 tbsp of vinegar
  • 1 tbsp lemon juice
  • 1 tsp mustard
  • Salt and pepper
  • Garlic powder

Preparation :

  1. Mix all the ingredients for the vinaigrette and refrigerate.
  2. Wash the arugula, and the cherry tomato and drain them then cut the tomato. Cut the potato into slices and the avocado into strips.
  3. Using a melon baller, cut mini balls of mozzarella, then dress the salad as desired.
