Bun Bun with Olives

The idea of ​​this shape is to have a swirl to reveal the slices of olives that go perfectly well with the sesame seeds.

Ingredients :

500g T45 flour

10g of sugar

10g instant yeast

10g milk powder

5 cl of oil

28 to 30 cl of lukewarm water

Slices of green and black olives

1 egg yolk + 1 tbsp orange juice


Preparation :

1- Dilute the yeast in half of the water and 1 tbsp of flour of the quantity mentioned. Leave to act for 5 to 10 minutes, in order to create a sort of leaven.

2- In the bowl pour the flour, milk powder, sugar, oil, and salt. Mix everything to make the salt disappear in the mass.

3- Add the sourdough and the rest of the water gradually, and knead for 5 minutes at a slow speed. Then increase the speed and finish kneading for 10 minutes.

4- Once the dough is well kneaded, smooth, and flexible. Film it, cover it with a clean cloth and leave it to rise for 1 hour.

5- Break the dough, divide it into a 100g ball, and finish the whole quantity. Then make sausages and let them rest for 5 minutes to be able to roll them easily.

6- Roll the sausages again, in order to obtain long ropes to be able to tie a knot. Then pass the ends all around the knot. SEE PHOTOS

7- Place them on lined baking sheets and space them out as they swell. Cover and let rise for 40 minutes.

8- Preheat the oven to 200°C, then brown the bread and sprinkle them with seeds, and glue the slices of olives. Bake for 35 minutes + or – depending on the oven.
