The cakes soft I like and that’s what I prefer the most, to associate them with fruits summer it’s a little happiness for gourmands.
It would be a shame to let the season pass and not take advantage of these juicy and tasty little summer treats.
For less than 30 minutes you have a cake that will delight your taste buds. A soft seasonal pie not to be to fail.
You can change the fruits keeping the base, as you can use other flours or dried fruits. This pie is taken from the famous Swiss pie already offered on my blog HERE
Ingredients : (6 to 8 people)
3 to 4 Nectarines depending on the size
100g brown sugar or cane sugar (in the absence of normal sugar)
120 g of soft butter (take it out of the fridge 5 to 10 minutes before)
60 g powderalmond
1 tsp baking powder (6 g)
A few drops of bitter almond flavoring (optional)
Neutral coating or apricot jam diluted in a little hot water if it is thick
1- Wash the nectarines and cut them into not very thin quarters to hold well when cooked.
2- Preheat the oven to 180°C, line an 18 or 20 cm removable mold by cutting a circle of parchment paper that you butter and also butter the edges of the mold without covering them.
3- In a container, work the butter with the sugar, add the eggs one by one until you have a light and very creamy mixture.
4- Mix the flour, the almond powder, the baking powder and add them, add the aroma and mix everything with a spatula to have a homogeneous paste.
5- Pour the batter into the mold, leveling it with the spatula, arrange the nectarine quarters, taking care to position them correctly.
6- Bake for about 25 to 30 minutes, let the cake cool before coating it and tasting it.
