Yogurt and I are not really friends, it causes me stomach discomfort due to intolerance to lactos. So this skyr recipe is more for my daughter who has been on a diet for a while. Skyr is low in carbohydrates, fat but high in protein and calcium.
It’s a trendy and healthy yogurt that comes to us from Iceland and which overshadows classic yogurt, especially yogurts rich in carbohydrates and fat. It is now found almost everywhere in the shops, plain or flavored.
And if we make our own skyr, it’s so easy to prepare that it would be a shame to deprive ourselves of it, especially since this yogurt is currently expensive to buy.
For that I took out my multidelicious to make a good dozen pots. Skyr, like classic yogurt, can be used in many savory and sweet recipes.
I have always prepared my yoghurts with whole milk in order to have it firmer and tastier and unlike the latter, skyr is made from skimmed or semi-skimmed milk. A slightly acidic taste is obtained, the texture is less silky than a classic yogurt richer in fat. We can flavor it according to our tastes and our desires, I redid it with vanilla and we appreciated it more than plain.
We start our skyr with a commercial pot but after that, we can always reserve a pot of what we have prepared for possible preparations.

1 jar of trade skyr
1 liter of organic skimmed milk
1- In a container, loosen the skyr with a whisk in the milk or do the opposite loosen the skyr and pour the milk gradually without stopping to stir in order to homogenize everything.
2- Distribute the milk with the skyr in the individual pots equipped with their drainers. Place the jars in the yogurt maker and program on the “cottage cheese” mode (mode 2 on the old model) for 14 hours.
3- Once this time has passed, take the jars out of the yogurt maker, wipe them and close them with their lids. Reserve in the fridge for at least 9 hours in order to consume them caught and cold.
